Saiyans

Saiyans are from the planet Vegeta (what used to be planet Plant). The planet is named after the king of Saiyans, Vegeta. He later gets a son and also calls him Vegeta, this is the Vegeta we know.
Planet Vegeta was destroyed by Frieza. Most of the Saiyans died here. Frieza had already killed king Vegeta.
The surviving Saiyans after planet Vegeta's destruction are: Vegeta, Nappa, Radditz and later in a movie Brolly and his father.
The Saiyans are ruthless and not very advanced. They eliminated a race called the Tuffels which they first shared the planet with, they built a space ship and flew to other planets, took them over, and sold them for money and technology. They were like planet stock brokers. With their ability to become Oozaru's with a full moon they increased in power over 10 times what gave them the advantage to take over. More stages of a saiyan are written below, from weak to strong.

Normal Saiyan:

Normal Saiyans always have black hair, except for half breeds. Like Trunks, he has purple hair but he still is partly Saiyan. Saiyans also have black eyes and a tail, except when it has been removed just like Goku.

Super Saiyan:

This is a Level reached only by training hard, so hard that boundaries are broken and almost go mad. The Saiyan drastically changes from looks, but also his spiritually powers (powerlevel) sky rockets. The colors of the hair and eyes changes, the eyes go green and the hair goes blond (golden) Super saiyans have: Bigger Muscles, Long blond hair (depends on how the strong the saiyan is). Mostly a Yellow glow and lightning surround the fighter
The ones who achieved this goal are: Goku, Gohan, Goten, Vegeta, Trunks

Ultra Super Saiyan:

1st reached by Trunks en Vegeta in the Room of Spirit and Time (aka The Hyperbolic Timechamber). This room is the ultimate weapon to train in because 1 day outside is 1 year inside, very handy if you dont have allot of time. 1 of the bad things is that the body ages a year in one earth day. the room is one emty space were temperatures can change drastic. And because the room is nothing but emptyness you can do what ever you want! Trunks and Vegeta were the 1st ones to train in there as Super Saiyans and achieved great power. Muscles grew bigger but speed decreased
The ones who achieved this goal are: Vegeta, Trunks

Super Saiyan 2:

Compared to Ultra Super Saiyan strength doesn't increases that much, but speed is increased multiple times. and the hairs of a Super Saiyan 2 are more split and spikier. Super Saiyan 2 was achieved by Gohan against Cell when he destroyed Android #16 by standing on his head and crushing the life out of him.
The ones who achieved this goal are: Goku, Vegeta, Gohan

Ultra Super Saiyan 2:

The only one capable of this form is the one and only Brolly, because he is the legendary Super Saiyan. Brolly is the son of the low level Saiyan, Paragus. Brolly is part of the legend which only takes place every 10.000 years that an extreme strong baby was born. Brolly appears in the movies and not in the series. His normal state is Saiyan but he can easily transform.

Super Saiyan 3:

This is the last form of super saiyan in Dragonball Z. The transformation is almost the same as a Saiyan or Super Saiyan. It just isn't that easy to get in this form. This Transformation also needs a lot of power and also takes a lot of energy to remain in this form or else you will change back into a normal Super Saiyan. The most recognizable things are the hair, which is way longer than a normal Super Saiyan or a Super Saiyan 2, there is a glow and again the eyes turn green but have pupils now. Every thing improved, power, speed, sight! The Saiyan also looks a lot meaner because the eyebrows are gone and his forehead looks bigger. The most complete form because everything is improved.

Oozaru:

This isn't a Saiyan level, but a transformation caused by the full moon, the Saiyan has to have a tail to transform. Once a Saiyan goes Oozaru he becomes 10 times as deadly and super big with a power to cause mass destruction.

Golden Oozaru:

This is caused by a Saiyan looking from the moon to the planet (the planet acts like a moon). The Oozaru is incredibly strong and only a saiyan who has completed this transformation can achieve Super Saiyan 4. For the record, this is only done in Dragonball GT, a sequel of Dragonball Z.
The ones who achieved this goal are: Goku, Vegeta

Super Saiyan 4:

For this stage you 1st need to be able to transform into a Golden Oozaruu. Goku is the only one who achieves Super Saiyan 4 on a natural way. Vegeta also achieves this goal but with a little help of a hyper modern device made by Bulma.
